Nos matchas cérémonial ne se récoltent qu'une fois par an. En mai, à Uji, les premiers bourgeons de printemps les plus concentrés en L-théanine et en chlorophylle sont cueillis à la main, un par un.
Les nervures sont retirées. Les feuilles sont séchées à l'ombre, puis moulues lentement à la meule de pierre. Ce procédé, inchangé depuis des siècles, préserve chaque nuance aromatique.
Le résultat : Une poudre d'un vert vif, soyeuse, sans amertume. Un umami long en bouche.

Seika is our exceptional ceremonial grade: stone-ground Ichibancha with zero bitterness. Hiraki is the classic, balanced, and vegetal ceremonial grade. Saku is the superior culinary grade, with a bold flavor that holds up to cooking.
The origin remains the same. The use and grade, however, differ.
Bitterness comes from inferior quality, water that is too hot, or excessive dosage. Our tea plants are shaded for several weeks before harvesting. This technique concentrates L-theanine and reduces the tannins responsible for bitterness.
Our three matchas come from Uji, in the Kyoto region, the historical birthplace of matcha for over 800 years. Family farm, shading, hand-picked, stone-ground. Only one harvest per year.
1g contains approximately 25 to 35mg of caffeine, the equivalent of a light espresso. 2g, about 50 to 70mg, which is a classic coffee. L-theanine slows down caffeine absorption: stable energy for 4 to 6 hours, without peaks or crashes.
Sift 1g into a bowl. Add 70ml of water at a maximum of 75°C. Whisk in a W shape for 15 to 20 seconds.
For a latte: whisk 1g with a little hot water, then top up with 150ml of hot or cold milk.
No. An electric frother works very well for everyday use. The main thing is to dissolve the powder well to avoid lumps.
